Hi Paul,
The hard drive *itself* should do just fine.  I used several drives on a 
regular IDE controller (with an adapter) that I later used in my 701C.  The 
IBM preloads and any 701-specific hardware calls in your OS, on the other 
hand, will probably confuse the hell out of any desktop you try to use the 
drive to boot.
